Holiday Preparations with Chef Sandy
While it’s only August, our team already starts to think about and plan our Holiday Collection. A quick Q/A with Chef Sandy reveals some things she is looking forward to.
Which bonbons in our Holiday Collection are you excited to see again?
Sticky Toffee Pudding is one of my favorites. I love using dates at that time of year and the flavor of a caramelized white chocolate ganache gives warm belly vibes.
I’m also excited for Kir Royal which gives us the opportunity to turn bubbly (yes, champagne!) into a festive bonbon.
Where are you in the process?
So glad you asked! This week I’m planting the chocolate mint we use for the mint cookie bonbon. It’s one of my favorite ingredients and it’s something I get to do with my young boys so it’s a special holiday tradition - planting in August!
What’s your favorite holiday tradition?
Telling our boys (age 2 and 6) they can go to bed as late as they want on New Years Eve. They’ve never made it past 9:30.
What’s new for this Holiday season?
I like asking the kitchen staff what flavors or traditions are personal to them. This can spark a idea for a new bonbon and that’s how we created Champurrado (a Mexican chocolate drink) a couple years ago. We'll see what comes up this year.
